The Ultimate Panjeeri Recipe: A Winter Superfood

If you grew up in a Desi household, you know the smell. That warm, nutty, sweet aroma that fills the house as winter sets in.

Panjeeri.

It is often dismissed as just a "sweet," but traditionally, Panjeeri was a supplement. It was designed to strengthen bones, warm the body, and aid recovery (especially for new mothers).

Today, we're sharing the Authentic Heirloom Recipe—no cheap fillers, just pure strength.


The Secret is in the Roast

The key to a perfect Panjeeri is patience. Every ingredient must be roasted separately in Pure Sahiwal Ghee to unlock its flavor and crunch. If you rush it, you get a raw taste. If you burn it, it becomes bitter.

The Ingredients:

Dry Ingredients

  • Semolina (Suji): 500g - The base.
  • Fox Nuts (Phool Makhana): 100g - For calcium and crunch.
  • Almonds & Cashews: 200g each - For good fats.
  • Edible Gum (Gond): 100g - Excellent for joint health.
  • Melon Seeds (Char Maghaz): 50g.
  • Desi Jaggery (Gur) or Shakkar: To taste.

The Liquid Gold

  • Pure Sahiwal Ghee: 400g - Do not compromise here. This binds everything together.

The Method

Step 1: The Gond (Edible Gum) Heat 2 tbsp of Ghee. Fry the Gond crystals until they puff up like popcorn. Remove and crush them into a coarse powder. This is crucial for the texture.

Step 2: The Crunch (Makhana & Nuts) In the same pan, roast the Makhana until crispy. Remove. Then roast the almonds and cashews until golden brown. Coarsely grind these (don't make a powder, keep some chunks!).

Step 3: The Base (Suji) Add the remaining Ghee to the heavy-bottomed pan. Add the Suji. Roast on low heat for 15-20 minutes. Tip: You know it's done when the color turns amber and the Ghee starts to separate from the grain.

Step 4: The Union Mix everything together off the heat. Add the powdered sugar or Jaggery powder while the mixture is still warm (but not piping hot).
